How much or % Viscosity Variation compared with the initial value is usually allowed without jeopardizing correct lubrication of the machine.
oil shall be change when the variation is ?

Only the viscosity test is not enough to trigger an oil change.
As a general rule, at 10% change in viscosity a flag should be raised for proper investigation.
Viscosity test along with other tests such as elemental analysis, acid number and RPVOT (Rotated Pressure Vessel Oil Test) must be carried out for having a good data necessary to decide "oil change".
